  1. Poner las lentejas en una olla y cubrirlas con el doble de agua. Llevar a ebullición, bajar el fuego y hervir a fuego medio durante 10 minutos. Escurrir en un colador y reservar.
  2. En la misma olla, calentar el aceite de oliva y pochar la cebolla pelada con el laurel y una pizca de sal. Cuando esté transparente, añadir el pimiento rojo y cocinar hasta que esté ligeramente blando. Añadir el ajo, el comino, el chile en copos y el cilantro y dejarlos que se cocinen unos minutos.
  3. Añadir las lentejas, el tomate, el azúcar y otra pizca de sal. Remover bien y añadir el agua, tapar y dejar que hierva a fuego medio-bajo durante 45 minutos, con la olla semi-tapada. Si se queda sin agua añadir un poco más. Remover de vez en cuando.
  4. Pasado ese tiempo añadir la mitad del yogur, mezclar y dejar que hierva 10 minutos. Cuando estén blandas las lentejas, apagar y añadir el pimentón ahumado y el zumo de limón. Hacer 2 huecos en las lentejas, cascar los huevos en cada hueco, echar el queso feta por encima y dejar a fuego alto unos minutos.
  5. Cuando empiecen a cuajar las claras, tapar, bajar el fuego y cocinar unos minutos hasta que las claras se cuajen del todo. Servir junto con 1 cda de yogur, cebolleta picada y un poco de chile en copos.
