  1. Ponemos un chorro de aceite en una olla grande y lo calentamos. Ponemos el morrón picado, la zanahoria, los dientes de ajo y cocinamos unos minutos. Añadimos la berenjena en rodajas y el choclo en trozos y cocinamos un poco más.
  2. Cuando la berenjena tome algo de color añadimos las lentejas, removemos unos minutos.
  3. Añadimos el agua, yo pongo más o menos dos litros y medio porque me gusta con bastante caldo. Añadimos la espinaca lavada, removemos y dejamos cocinar tapado hasta que levante hervor. Cuando comienza a hervir añadimos sal a gusto y dejamos cocinar 10 minutos siempre tapado.
  4. Mientras picamos en cubos las papas, boniatos y zapallo.
  5. Cuando pasan 10 minutos de cocción añadimos las verduras a la olla. Removemos y tapamos nuevamente hasta que comienza a hervir, ahí recién añadimos todos los condimentos elegidos y dejamos cocinar 15 o 20 minutos hasta que estén tiernas las verduras que pusimos por último.
  6. Apagamos el fuego y añadimos el perejil picado, mezclamos y dejamos reposar un rato antes de servir.
  7. Y a disfrutar!
